Adding an egg to your salad may make it easier to absorb the nutrients better. A small study in The American Journal of Clinical Nutrition concludes that the carotenoids that give veggies such as carrots and tomatoes their color make the nutrients in raw vegetables stick better. They’re also helpful in fighting inflammation. Well-known carotenoids are beta carotene and lycopene. It is suggested that the fat in the egg yolk is responsible for maximizing the nutrient intake.
