When you think of school lunches, healthy dishes are probably the last thing that come to mind. School lunches in America don’t have a good rep as options such as pizza and cheeseburgers often adorn the menus, which hurts the health of kids and the environment. In an effort to improve health and curb environmental effects, New York City public schools will enforce a “meatless Monday” in its student lunches. That’s big news considering New York City is home to 1,800 public schools, making it the nation’s largest school system.The idea for Meatless Mondays is that it will introduce hundreds of thousands of young New Yorkers to the notion that small changes in diet can create larger changes for their health and the health of our planet.
