Vegetables are a critical source of vitamins, minerals, antioxidants, fiber, and even hydration that our bodies need to properly function. If you’re tired of salads, here are great tips for adding more veggies to your diet in ways that taste good too!

The first strategy is to try new vegetables. If you’re bored of your go-to vegetables, try some new and exciting options like kale, mustard greens, and artichokes. Watercress is a great addition to sandwiches and dandelion greens will spice up your salads. Green peppers are delicious in stir fry and brussel sprouts are a great winter veggie that packs in loads of vitamin C.

If you’re looking for ways to sneak veggies into more meals, there are many options for delicious ways to add them to your daily staples. Adding greens to morning smoothies is a classic and fruits and nut butter can pretty much mask the taste of greens entirely. 

Vegetable soups are a warming and delicious winter option and can be loaded with veggies. Kale wilts nicely into most dishes and hearty winter greens like broccoli are fabulous flavor sources. 

Sauces and dips are another place to pack in the vegetables. Adding microgreens to your pesto or spinach to your artichoke dip will make for delicious additions. 

If you’re craving something with a bit of crunch, try drying your veggies into chips. Baking kale or thinly sliced vegetables and baking them in the oven will make for a great potato chip substitute!

There are hundreds of ways to spice up your meals without sacrificing vegetables. Get a little creative and enjoy the delicious health and flavor benefits of greens!
