As the lionfish continues to jeopardize the well-being of marine ecosystems in the Atlantic Ocean, a grassroots campaign has come up with an unusual strategy to control the threat: Make the lionfish a regular dinner option. Touted as a delicacy in some countries and labeled “best choice” for its rates of sustainability, restaurants and even Whole Foods have expressed interested in making the lionfish available to consumers. Now a reliable supply chain is being made for the hard-to-catch fish, leading some to believe that the lionfish market might be on the cusp of entering the seafood mainstream. Whole Foods has already announced it will start selling lionfish in its stores over the next six months and more restaurants are adding it to their menu cards. If the demand for lionfish continues to grow, then further damage caused by the invasive species can be prevented.
