Widespread food safety training for vendors that teach them how to limit the transmission of diseases like SARS and Avian flu in meat sold in open markets is the key to food stability for many African Countries according to the IRLI. Additionally, consumers are willing to pay up to 15 percent more for meat that is guaranteed safe.
