In Africa, traditional open-air markets are where 85 percent of groceries are bought and sold. Contrary to what you might think, meat and milk sold at open-air markets is safer than meat and milk sold in westernized African supermarkets, according to recent findings by the International Livestock Research Institute (ILRI). Widespread food safety training for vendors that teach them how to limit the transmission of diseases like SARS and Avian flu in meat sold in open markets is the key to food stability for many African Countries according to the IRLI. Additionally, consumers are willing to pay up to 15 percent more for meat that is guaranteed safe.
