What defines milk? Does it need to come from something that lactates? Does it need to be white? Does it even matter how we define milk? Despite cultures from across the globe labeling the juice from almonds and soybeans as milk, the US Food and Drug Administration is trying to figure out if that ‘juice’ can be defined as milk because big dairy companies are upset that nondairy beverages such as soy milk or almond milk are put under the same umbrella as cow milk. While the whole story sounds a bit strange, the FDA’s definition of milk matters. Here’s why.
