A traditional farm can count on seven to eight harvests a year. Some urban farms, like the subterranean ones that lie deep beneath London’s streets, have about 60 harvests a year. This statistic alone shows why the urban farming projects sprouting up across the globe are not just a fad, but rather, a very promising start to the farming revolution. Urban farms that grow salads and herbs, however, are not the only city-based projects aimed at making food more local. Rooftop bee-keeping, aquaponic fishing, and a floating dairy farm which is set to open in Rotterdam later this year all represent the next wave in urban farming projects.
