The world’s demand for meat and animal products is still climbing, which is seriously bad news for the planet. And not only does it come at a huge environmental cost, but only a small fraction of the original protein from meat remains once it arrives to your plate. If you want to improve your diet while helping the environment, throw some pulses like beans, peas and lentils into your dishes. Pulses are generally cheaper than meat, and are rich with protein and other essential micronutrients including iron, zinc, magnesium and folate. They’re cheaper, healthier and better for the environment. What could be better?
