Adopting a plant-based diet is great for the planet and your health, but when it comes to making your favorite recipes animal product-free, it’s not always easy to know what substitutes to use. Eggs in particular are a common ingredient in most baked goods, so here’s a whole list of replacements you can use to make your favorite goods vegan!

  1. Agar agar. Mix together one tablespoon agar agar and one tablespoon water for a perfect egg substitute. 
  2. Applesauce. ¼ cup applesauce can be subbed in for an egg to get perfectly moist baked goods. 
  3. Aquafaba. This versatile liquid is found in cans of chickpeas. Three tablespoons make a great egg substitute and it can even be beaten to replicate whipped egg whites in meringues. 
  4. Chia seeds. The gooey texture of soaked chia seeds makes for a great egg replacer. Mix one tablespoon chia seeds with two tablespoons water and let soak before using. 
  5. Arrowroot powder. Use two tablespoons of arrowroot powder and 3 tablespoons of water to replace an egg. 
  6. Avocado. Similar to applesauce, ¼ cup mashed avocado is a perfect egg replacer for those rich baked goods. 
  7. Banana. ¼ cup mashed banana can replace eggs for a delicious flavor kick. 
  8. Carbonated water. Believe it or not, ¼ cup carbonated water is one of the easiest egg replacements. 
  9. Ground flaxseed. This is a favorite of vegan bakers. Mix one tablespoon ground flaxseed with three tablespoons water for one “egg.”
  10. Nut butter. Three tablespoons of nut butter mixed with a splash of water make a deliciously rich egg substitute. 
  11. Silken tofu. ¼ silken tofu is a great egg replacement, especially in savory recipes. 
  12. Vinegar and baking soda. This bubbly mixture takes one teaspoon baking soda and one tablespoon vinegar per egg. 
  13. Commercial egg replacers. If DIY isn’t quite your speed, there are many commercially made egg replacers including JUST Egg, The Neat Egg, and VeganEgg. These are great if you’re craving egg-focused recipes like scrambled eggs, omelets, or frittatas.
