Today’s Solutions: March 23, 2026

Masks, hand sanitizer, sweatpants, and social distancing practices don’t really inspire romance, making the last year one of the least sexy in modern history. The pandemic has made pursuing new connections almost impossible, and for those who were in relationships, safety measures and shutdowns have thrown a wrench in date night plans.

In light of pandemic changes, Slate Catering’s Allie Chandler and restauranteur Alvaro Rojas have reassessed how romance is packaged and are providing a solution for Californians itching for a night out. Based in Santa Barbara, CA, Chandler and Rojas have transformed a Sprinter van into the Backyard Bistro, a stunning venue for the date night of your Covid-era dreams.

The van offers couples the opportunity to have a romantic dinner, complete with upscale craft cocktails, a thoughtfully assembled charcuterie plate, and a stunning view. Parked alongside a dramatic stretch of Santa Barbara’s coastline and socially distanced from everyone, couples can gaze upon the beauty of their local landscape while they bask in only each other’s company.

Since its inception in 2020, the Backyard Bistro has had several reservations a week from not only couples but also from families and pods looking to celebrate anniversaries and birthdays.

The van allows guests to customize their experience, giving them the option to add a flower bouquet, dessert, beer, wine, a curated mezcal tasting, or a fully catered meal. Guests can also arrange to have the van moved to another location, or transform their date from a sit-down dinner to a movie night under the stars.

Chandler and Rojas plan to continue offering the Backyard Bistro experience even post-pandemic as a refreshing alternative to traditional dating.
