Don’t throw away bruised fruit. Instead, try to eat it, or even… drink it. Coming up soon is an online TV series that will show you that food waste can even be used to brew beer. Food and culture website First We Feast brought together TV Chef Mario Batali and brewer Sam Calagione, who will together create an ale fermented from overripe tomatoes, bruised fruit and other fruit not sold to consumers, but very well usable for other purposes. The episode is inspired in part by wastED, a community of chefs, farmers, fishermen, distributors, processors, producers, designers and retailers, working together to find a new purpose for our food leftovers. Earlier this year, a pub in Chicago already caught attention for an extra bitter ale it made from food that otherwise would have been thrown away.
