Located in California’s Bay Area, New Wave Foods is currently developing a plant-based shrimp that mimics the taste, texture and nutritional value of the real thing. One primary ingredient is a strain of algae common to the shrimp diet, which gives them their color and flavor. The company aims to win over the growing market of seafood-eaters who are concerned about sustainability and health, as well as make a dent in the overall seafood demand to help curb overfishing.
