There’s no question that alternative meats have fully made their way into fast food, fine dining, and everything in between. But what about other alternative options for vegans who want to give up not only meat, but all animal products? Just, a leading producer of plant-based eggs, has partnered with international food service provider Sodexo to increase distribution of their plant-based product.

Eggs are tougher to replicate with plant-based materials than meat, but alternative eggs are also a big market given their versatility and prevalence in all types of cooking and baking recipes. Just creates their alternative eggs out of mung beans, which they say are the key to getting an “egg” which scrambles, foams, and cooks like the real deal.

While eggs are not as environmentally problematic as beef, the animals are subjected to incredibly inhumane conditions and are prone to disease outbreaks such as the H5N1 avian flu, which killed 50 million hens in 2014 and 2015. Just’s alternative variety uses “98% less water, 83% less land and emits 93% less CO2 than conventional animal sources.”

This partnership means Just eggs will be making a more prominent appearance in schools, office buildings, and hospitals. If you’re a vegan who loves a good breakfast omelet, this bean-based egg could be a perfect solution for you.
